- In a small bowl, whisk together maple syrup, Dijon mustard, garlic powder, salt, and black pepper.
- Pat pork dry and rub with olive oil, then place on prepared baking sheet.
- Brush half the maple Dijon glaze over the pork, reserving the rest.
- Roast pork in oven for 12 minutes; brush remaining glaze on pork and continue roasting another 8 minutes or until internal temperature reaches 145°F.
- Remove pork from oven and let rest 5 minutes before slicing and serving.
