- Season pork chops generously with salt and pepper on both sides.
- Heat 1 tablespoon olive oil in a large 12-inch skillet over medium-high heat.
- Add pork chops and sear 4-5 minutes per side until golden brown and internal temperature reaches 145°F; transfer to plate and tent with foil.
- Reduce heat to medium; add remaining olive oil, butter, and apple slices to skillet.
- Cook apples 5 minutes until soft and starting to brown.
- Return pork chops to skillet, drizzle maple syrup and sprinkle thyme over chops and apples; cook 2 minutes, spooning glaze over pork.
- Serve pork chops topped with glazed apples.
