- Heat oil in a large deep skillet over medium-high heat. Add pork and onion and cook 8–10 minutes, breaking the meat into small pieces, until pork reaches 160°F.
- Stir in garlic and ginger for 30 seconds.
- Add cabbage and carrot in batches, stirring as they wilt. Cook 6–8 minutes until the cabbage is tender but still has some bite.
- Stir in soy sauce and vinegar, heat for 1 minute, and top with scallions.
