Let’s make it

  1. Heat oil in a large deep skillet over medium-high heat. Add pork and onion and cook 8–10 minutes, breaking the meat into small pieces, until pork reaches 160°F.
  2. Stir in garlic and ginger for 30 seconds.
  3. Add cabbage and carrot in batches, stirring as they wilt. Cook 6–8 minutes until the cabbage is tender but still has some bite.
  4. Stir in soy sauce and vinegar, heat for 1 minute, and top with scallions.

Storage & leftovers
