  1. Season pork chops on both sides with salt, pepper, and garlic powder.
  2. Heat olive oil in large skillet over medium-high heat. Add pork chops and sear until golden, about 4-5 minutes per side.
  3. While chops cook, whisk together maple syrup, Dijon mustard, and apple cider vinegar in a small bowl.
  4. During last 3 minutes of cooking, brush pork chops generously with maple Dijon glaze, flipping and glazing several times to build a sticky coating.
  5. Cook until pork reaches 145°F internal temperature. Remove from heat and let rest 3 minutes before serving.
