Let’s make it

  1. Cook beef and onion in a skillet over medium heat for 7–9 minutes, breaking up clumps, until beef reaches 160°F. Drain excess fat carefully.
  2. Stir in chili powder, cumin, garlic powder, and salt for 30 seconds.
  3. Add tomato sauce and water. Simmer 5 minutes until spoonable and lightly thickened.
  4. Warm tortillas in a dry skillet. Divide the filling among them and add lettuce and cheddar.

Warm corn tortillas just before filling to make them flexible and less likely to split.

Storage & leftovers

Keep filling and fresh toppings separate. Refrigerate within 2 hours for up to 3 days and reheat the beef to 165°F.
