One step at a time
Let’s make it
- In a small bowl, dissolve yeast and sugar in warm water. Let stand 5 minutes until foamy.
- In a large bowl, combine flour and salt.
- Add yeast mixture and 2 tablespoons olive oil to flour and stir to form dough.
- Turn dough onto floured surface and knead for about 5 minutes until smooth and elastic.
- Place dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm place for 45 minutes or until doubled in size.
- Preheat oven to 425°F.
- Punch down dough and transfer to a greased 9x13 inch baking pan.
- Press and stretch dough evenly to fill the pan.
- Mix minced garlic and chopped herbs with remaining 1 tablespoon olive oil; brush over dough surface.
- Use fingers to dimple dough all over, sprinkle coarse sea salt on top.
- Bake until golden brown, about 20 minutes.
- Remove from oven and cool slightly before slicing and serving.
A little kitchen know-how
Use warm water to activate yeast properly; do not over knead dough to keep focaccia tender.
