Rustic Tomato Basil Soup

- Heat olive oil in a large pot over medium heat.
- Sauté chopped onion until translucent, about 5 minutes.
- Add minced garlic and cook 1 minute more.
- Add fresh tomatoes, tomato paste, vegetable broth, and red pepper flakes; bring to a boil.
- Reduce heat and simmer uncovered for 20 minutes, stirring occasionally.
- Remove from heat and stir in fresh basil.
- Use an immersion blender to puree soup until smooth, or carefully transfer to a blender in batches to puree.
- Season with salt and pepper to taste.
- Serve hot garnished with additional basil leaves.
