Let’s make it

  1. Heat oil in a saucepan over medium heat. Cook onion 6–8 minutes until soft.
  2. Stir in garlic for 30 seconds.
  3. Add tomatoes, oregano, salt, and pepper. Bring to a gentle simmer and cook uncovered 20 minutes, stirring occasionally.
  4. Stir in basil. If desired, carefully blend with an immersion blender off the heat until smooth.

Keep the simmer gentle and use a splatter screen to contain the bubbling sauce.

Storage & leftovers

Refrigerate within 2 hours for up to 3 days, or freeze for up to 2 months. Reheat to 165°F. This is not a canning recipe.
