Let’s make it
- Heat oil in a saucepan over medium heat. Cook onion 6–8 minutes until soft.
- Stir in garlic for 30 seconds.
- Add tomatoes, oregano, salt, and pepper. Bring to a gentle simmer and cook uncovered 20 minutes, stirring occasionally.
- Stir in basil. If desired, carefully blend with an immersion blender off the heat until smooth.

Keep the simmer gentle and use a splatter screen to contain the bubbling sauce.
Storage & leftovers
Refrigerate within 2 hours for up to 3 days, or freeze for up to 2 months. Reheat to 165°F. This is not a canning recipe.
