- Cook quinoa in 2 cups water by bringing to a boil then simmering covered for 15 minutes until water is absorbed. Fluff with a fork and allow to cool.
- In a large bowl, combine cooled quinoa, chickpeas, cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk together orange juice, olive oil, lemon juice, salt, and pepper to make the dressing.
- Pour dressing over salad and toss to combine evenly. Serve chilled or at room temperature.
