Let’s make it

  1. Place eggs in a saucepan and cover with cold water by 1 inch. Bring to a full boil, cover, turn off heat, and leave 12 minutes.
  2. Transfer to ice water for 15 minutes. Peel and halve lengthwise; remove yolks to a bowl.
  3. Mash yolks finely. Mix in mayonnaise, mustard, vinegar, salt, and pepper until smooth.
  4. Spoon into the whites and sprinkle with paprika. Keep chilled until serving.

A fine-mesh sieve makes the yolks especially smooth before mixing in the mayonnaise.

Storage & leftovers

Refrigerate covered and use within 2 days. Return to refrigeration within 2 hours, or 1 hour above 90°F.
