- Heat the oven to 375°F. Grease an 8-inch square baking dish.
- Mix oats, baking powder, cinnamon, and salt. In another bowl whisk milk, eggs, maple syrup, butter, and vanilla.
- Combine the mixtures and fold in the apple. Transfer to the dish and level the surface.
- Bake 30–35 minutes until set, lightly golden, and 160°F in the center. Rest 10 minutes before slicing.

Use rolled oats, not steel-cut oats, which need more liquid and a longer cooking time.
Storage & leftovers
Refrigerate covered within 2 hours for up to 3 days. Reheat portions to 165°F with a spoonful of milk.
