  1. Heat the oven to 375°F. Grease an 8-inch square baking dish.
  2. Mix oats, baking powder, cinnamon, and salt. In another bowl whisk milk, eggs, maple syrup, butter, and vanilla.
  3. Combine the mixtures and fold in the apple. Transfer to the dish and level the surface.
  4. Bake 30–35 minutes until set, lightly golden, and 160°F in the center. Rest 10 minutes before slicing.

Use rolled oats, not steel-cut oats, which need more liquid and a longer cooking time.

Storage & leftovers

Refrigerate covered within 2 hours for up to 3 days. Reheat portions to 165°F with a spoonful of milk.
