Spicy Tofu and Vegetable Stir-Fry

- Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add tofu cubes and cook until golden brown on all sides, about 8 minutes. Remove tofu and set aside.
- Add remaining oil to the skillet. Stir-fry bell pepper and broccoli for 5 minutes until tender-crisp.
- Add garlic and ginger to the vegetables; cook 1 minute until fragrant.
- Return tofu to the skillet. Stir in soy sauce and sriracha. Cook for another 3 minutes, stirring frequently, until heated through and flavors are combined.
- Season with salt and pepper to taste. Serve immediately with rice or noodles if desired.

Storage & leftovers
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat until warmed through, about 5 minutes.
