Spicy Cajun Shrimp Skillet

- Heat 1/2 tablespoon olive oil in a large 12-inch skillet over medium-high heat.
- Add sliced onion and bell peppers; sauté until tender, about 5-6 minutes.
- Add minced garlic and cook 1 minute more until fragrant.
- Push vegetables to the side of the skillet; add remaining 1/2 tablespoon olive oil and shrimp to the pan.
- Sprinkle Cajun seasoning on shrimp and cook 2-3 minutes per side until shrimp turn pink and reach 145°F internal temperature.
- Stir vegetables and shrimp together, cook another minute to combine flavors.
- Serve shrimp and peppers hot over warmed cooked white rice, garnish with chopped parsley.
