- Heat oil in a skillet over medium heat. Add onion, garlic, and ginger; sauté until softened, about 5 minutes.
- Add curry powder, cumin, and turmeric; cook 1 minute until fragrant.
- Transfer onion and spices to the slow cooker. Add chicken pieces, diced tomatoes, coconut milk, and salt. Stir well.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until chicken is cooked through (165°F) and tender.
- Stir halfway through cooking to combine flavors evenly.
- Serve garnished with chopped cilantro.
